Bernard Fouquet's Domaine des Aubuisières has 26 hectares of Chenin Blanc vineyards planted on the best soils in Vouvray - clay & limestone which contirbute to the mineral character of this wine. Bernard works with biodynamic practices, using treatments only when necessary and is a great believer in terroir; the wonderful flinty soils translate into his Cuvée de Silex which exhibits a great mineral character as well as the typical honeyed fruit that is characteristic of Chenin Blanc. The finished wine is linear with a lovely salty minerality.
This is a beautiful light to medium-bodied dry white Chenin Blanc, crisp and more subtle than the South African Reyneke Chenin Blanc. Its crisp acidity and mineral character balance with the hints of honey and the lemon & juicy apple fruit flavours.
Recommended for drinking with oysters, other shellfish and fish generally, chicken - it will also stand up well to creamy sauces, game, Asian cuisine, tagines, sweet potatoes, parsnips and butternut squash.

A favourite recent find and great value if I say so myself. Lovely, crisp dry Chenin with hints of tangerine, lemon aromas & flavours, a touch of honey and flinty minerality. So much going on - it's delicious.
