Since the 2013 vintage Domaine Billaud-Simon has been bought by respected Burgundy producer, Maison Faiveley; it is good to see that they have made little change to Billaud-Simon's consistently good wines. I used to stock Billaud-Simon Premier Cru 'Les Vaillons' but have moved for this vintage onto another Premier Cru, 'Mont de Milieu’.
The vineyard is named 'Mont de Milieu’ because the hill upon which it sits used to mark a boundary between the Chablis "comté" which at the time was part of the Champagne region and the Fleys "comté" which fell under the Duchy of Burgundy. The 2015 vintage is widely considered to be an excellent one for Chablis, bringing quite rich, long-lasting wines with good acidity, aromas of pear, quince, apricot and peach combined with fresh citrus notes.

This wine is categorised as a crisp, light white wine but has more of a medium body and is developing the Chablis-esque butteriness that will make it richer as it develops in bottle. The aromas seem quite delicate but on the palate there is much more intensity of apples, citrus fruits, lemon oil plus minerality and floral notes of orange-blossom and honeysuckle. There is a refreshing acidity combined with a smooth texture and a very long, lemony finish.
This is classic Premier Cru Chablis. Delicious on its own or with food. This is very drinkable now and will develop further richness over the next five years.
Recommended for drinking with oysters, other shellfish and fish generally, foie gras, chicken, fruit-based desserts.
Clear, bright hue with light green tinges. This 1er Cru reveals a remarkably rich aromatic profile with ripe citrus fruits and white flowers. The palate is rich and round with exceptional length.

The palate is well defined with a fine bead of acidity and veins of mango and passion fruit that complement the edgy, mineral core, all segueing into a precise and very focused finish. This is a very well made and quite delicious Mont de Milieu."

"So creamy on the nose at first but with air comes the super-zesty lemon fruit. More savoury and spicy on the palate, broader in the mouth but the acidity pulling it together to a long stony finish. Chalky texture and really persistent. Spicy aftertaste."
